I've been vegetarian for 6 years now and it's EASY even in richly meat-and-potato land like where I live. For 1-2 months/year, I can grow a garden. Otherwise, it's salad for lunch, salad for dinner, all from the grocery but healthier than pasta and meatballs! I feel so much better and I have had no weight issues since I've begun. Cholesterol is back down, energy is back up, seems even easier to think.
If you can go-veg for 2 meals a week, try moving it to 3, then 4, then every day one meal, then keep going. It's not as hard as you think and you will feel better about yourself, your health, and the lasting impact on the economy. Even the UN Secretary General said if everyone became vegetarian, we would solve global warming. It's that simple. Factory farms from which over 90% of American meat comes from create the most harmful gases which cause global warming and this severe weather that we've been seeing for several years now.
